Chocolate Has-A-Nut Cookie and Quesadillas

Ok, first things first. Up front, my new favorite chocolate chip cookie from Celine over at Have Cake, Will Travel. She put these up as a virtual present for her sister, who just got engaged. Now if you have never checked out Celine’s blog, please do. She makes a lot of cookies and other sweet things; but the best thing about her recipes is that they are on the smaller size. Such as these cookies. The yield on this entire recipe is only 16 cookies (I got 15 when making it). And each cookie is rather bite size as well. Perfect to put in the lunch box. They taste wonderful, even though I didn’t have all the extracts called for in the recipe. Didn’t have any hazelnuts either, so just used some hazelnut meal from the freezer. Just a nice little bite to give you your chocolate fix for the day.


And on to dinner tonight. As I said yesterday, my refrigerator is full of food so tonight was leftovers. I had another of the Sweet Potato Quesadillas from Vegan Dad and also turned the Seitan, Peppers and Onions into a quesadillas with this cheese. Just added some Southwestern Chipotle Mrs. Dash seasoning to the “cheese” before adding the filling. They were both very good.

If any of you think that I live on quesadillas, let me tell you that at one point in my life, I nearly did. I used to live in Lawrence, KS (in my pregan days) but worked in the Kansas City area, so my daily commute was 30 minutes to an hour, depending on where my temp assignments took me. Since there were some nights that I just could not face cooking when I got home, quesadillas filled the gap. I came up with a filling of the pepper and onion stir fry mix with corn that I could make ahead and put in the refrigerator. It was nice to know that I could have a quick and healthy (and cheap) dinner when I got home and had it sometimes up to 3 times a week. Especially in the winter, when the commutes were not fun.

  1. i pretty much lived on quesadillas for a time in my life too. that and stouffer's french bread pizzas. yay junk food! and yay cookies, your look delicious.

  3. Oh love your quesadillas. I can eat the same thing over and over and over again too! LOL

    And wow, cookies look amazing. I have yet to have a fully successful cookie experience. I am horrible at baking!

  7. Sharon, nice to meet you also. And a hint to help your baking, it is a science so think of it like a chemistry experiment. Measure everything and follow the recipe exactly. Do that long enough it will get easier.
