Zucchini Mediterranean Style


This was a simple dinner and just perfect for a cool, rainy day in Florida. I found this on Allrecipes.com and really liked it. This is a very simple dish and really lets the veggies shine through. The only seasoning is some oregano. I did cheat on the onion and pepper by using my frozen pepper mix and didn’t have enough zucchini, since they had been sitting in the refrigerator for a week, waiting for me to make this. But it was still quite good.

In other news, I made my rice milk base last week and mixed up my first batch today. Have yet to taste it, but it does appear rather “milk-like”. Will let you know once I drink some. I did write down how the base was made, so you can have my recipe also.
