Chickpea Cutlets with Mole Sauce

Tonight’s dinner was an experiment. I was wondering what the Chickpea Cutlets from VCON would taste like with the mole sauce I have in the refrigerator. I am happy to report that they taste quite good. The mole sauce compliments the patties quite well. And now that I have that sauce diluted properly with vegetable stock, it no longer tries to fry my mouth. This is definitely worth some repetition and further experimentation. I wonder how it would be with spaghetti squash patties underneath? Will have to try.

Now I know that the side of mashed sweet potatoes with marshmallow topping, may not seem like it goes with the rest of the dinner. However I still have the topping from Thanksgiving and Christmas, so I decided to use some of it up. The sweetness was rather nice, since it did help cut some of the heat from the mole.

Not a bad little meal for midweek.
